Sri Lankan cooking starts with freshly scraped coconut: for pol sambol, for mallum, for coconut milk and for sweets. Outside the coconut belt, a fresh mature coconut is hard to find and slow to scrape, so frozen grated coconut is a steady line in South Asian and Southeast Asian grocery freezers. Sri Lanka grows its own coconuts, and processors scrape, pack and freeze the kernel the same day.

Grated coconut is a high-fat, high-moisture food, so it is sold on fat, moisture and microbiology, with a short time between scraping and freezing. We send the lot results with each shipment and can test to your market’s limits through an accredited lab.
