The palmyra palm is the signature tree of the Jaffna peninsula. Its sap is boiled down into palmyrah jaggery (panangkatti), a dark, crumbly palm sugar set in small cones or blocks, and its young tubers are dried and milled into odiyal flour, the base of odiyal kool and other northern dishes. Both are staple items in Sri Lankan Tamil kitchens at home and abroad.

What we supply

Quality points

Jaggery is a natural product, so color and hardness change with the season and the boiling. We record moisture for each lot and can arrange sucrose, microbiology and heavy metal tests through an accredited lab before shipping.
