Moringa (murunga in Sinhala) grows across Sri Lanka’s dry zone and is part of everyday cooking there. Its leaves are dried and cut to a tea grade for infusions, either on their own or blended with ginger, lemongrass or Ceylon cinnamon to round out the grassy taste.
