Description

True Ceylon cinnamon (Cinnamomum verum) quills, hand-peeled and air-dried, in grades Alba, C5-Special, C5, C4, M5, H1 and H2. Packed in 10 kg and 25 kg bulk cartons.

Reading the grades

Ceylon cinnamon quills are graded by thickness. Alba is the thinnest quill. The C grades (Continental) come next, and a higher number means a thinner quill: C5 is thinner than C4. M grades (Mexican) are thicker, and H grades (Hamburg) are the thickest and coarsest. Thinner grades suit retail and whole-stick display. Thicker grades are often used for grinding and extraction.
