Description
Key attributes
Mace is the lacy red covering (aril) around the nutmeg seed, Myristica fragrans, peeled off by hand and dried until it turns orange to golden. Sri Lanka grows nutmeg in its mid-country spice gardens and exported about 346 tonnes of mace in 2025.
Mace is used whole in pickling, stocks and spiced rice, and ground in baking, sausage and meat seasonings and spice blends. It has a softer, more aromatic flavour than nutmeg.
