Description
Key attributes
Ceylon cinnamon Extra Special quills, the top of the Continental range and the grade immediately below Alba. Hand-rolled and bundled, Extra Special gives most of the fine appearance of Alba at a working price, which is why it is the usual choice for premium retail packing where volume rules Alba out.
True Ceylon cinnamon (Cinnamomum verum) is a different species from cassia and is naturally low in coumarin.
Ceylon cinnamon is graded by quill diameter and finish, not by quality alone. Alba is the finest and palest, followed by the Continental range (Extra Special, C5 Special, C5, C4), then Mexican and Hamburg grades. A lower grade is not a lesser product, it is a thicker quill, and the right grade depends on whether the cinnamon is being presented whole or ground.
