Description
Key attributes
Ceylon cinnamon Alba quills, the finest grade in the Sri Lankan grading system. Alba is the thinnest and palest quill, hand-rolled from the inner bark of Cinnamomum verum and bundled for export. It is specified where the cinnamon is the flavour rather than a background note: premium retail packing, confectionery, patisserie and gifting.
Unlike cassia, which is what most markets sell simply as “cinnamon”, true Ceylon cinnamon is naturally low in coumarin, which is why it is preferred where cinnamon is consumed regularly or in quantity.
Ceylon cinnamon is graded by quill diameter and finish, not by quality alone. Alba is the finest and palest, followed by the Continental range (Extra Special, C5 Special, C5, C4), then Mexican and Hamburg grades. A lower grade is not a lesser product, it is a thicker quill, and the right grade depends on whether the cinnamon is being presented whole or ground.
