Why steam sterilization

Ground spices naturally carry bacteria from the field. Steam sterilization lowers the count without chemicals. Ethylene oxide treatment is not accepted in the EU, which has rejected spice shipments over its residues, so we quote steam-treated powder for food and supplement use.
