Description

Ceylon cinnamon quills in C5, a Continental grade one step finer than C4. C5 is the grade most often specified for retail-facing whole quills where a cleaner, slimmer stick matters but Alba pricing is not justified.

True Ceylon cinnamon (Cinnamomum verum) is a different species from cassia and is naturally low in coumarin.

Ceylon cinnamon is graded by quill diameter and finish, not by quality alone. Alba is the finest and palest, followed by the Continental range (Extra Special, C5 Special, C5, C4), then Mexican and Hamburg grades. A lower grade is not a lesser product, it is a thicker quill, and the right grade depends on whether the cinnamon is being presented whole or ground.
