Whole nutmeg dried in its shell, from Sri Lanka. Nutmeg is the seed of the nutmeg tree (Myristica fragrans). After harvest the red aril, sold separately as mace, is removed, and the seed is dried inside its hard shell. The shell is cracked later to release the kernel.
Buyers choose nutmeg in shell when they crack, sort and grade the kernels themselves at destination, or when their market prefers the kernel protected by its shell during storage and transit.
Untreated or lime-treated
Some markets ask for nutmeg treated with food-grade calcium hydroxide (lime). If yours does, tell us when you ask for a quote. Whether a lot is treated, and how, is confirmed per lot on the quotation, never assumed.

Prices in shell and shelled are not directly comparable, because part of the weight is shell. If you would rather buy the kernel, see bulk whole, ground or chipped nutmeg.
Muestras y análisis
Samples are sent before an order. A certificate of analysis can be arranged on the lot through the nutmeg export test panel: moisture, volatile oil, aflatoxins, ochratoxin A, Salmonella, E. coli and foreign matter. Order testing early, before loading, because lab results usually take 5 to 7 working days.
