C5 is the most widely traded high grade of Ceylon cinnamon: quills 10 to 12 mm in diameter (C5 Special, 7 to 9 mm, on request). Supplied as full 42 inch quills or cut to 2.5, 3, 4 or 5 inch sticks for retail and food service.

#### How Ceylon cinnamon is graded

Ceylon cinnamon quills are graded by diameter. The thinner the quill, the higher the grade. Alba is the thinnest, then the C grades, then M and H grades, which are thicker. True Ceylon cinnamon is made of many thin, soft layers rolled together. Cassia is one thick, hard layer, so the two are easy to tell apart.
