Cinnamomum verum, the true cinnamon, not cassia. Sweeter, finer and lower in coumarin. Available as quills or ground.

#### Quills or ground

Cinnamon quills are rolled sheets of inner bark, cut to length. They are sold whole for retail and used in cooking, mulled drinks and tea. Ground cinnamon goes into baking, spice blends and food manufacturing. Ceylon quills are graded by thickness. Ask for the grade names if you buy to a specification.
