About butterfly pea flower
Butterfly pea (Clitoria ternatea) is a climbing plant whose dried blue flowers are brewed as an herbal tea. The color comes from natural pigments that change with acidity, which is why lime or lemon turns the cup violet. Cafes use it for iced teas, lattes and color-changing mocktails, and bakers use it to color rice and desserts.
