This is true Ceylon cinnamon, not cassia. The two are sold interchangeably as "cinnamon" in most markets despite being different species: Ceylon is the paler, thin, multi-layered quill and is naturally low in coumarin, while cassia is the thick single-curl bark common in supermarket jars.
